I find the steel to be nice to work with, no noticable difference in grinding in annealed state (although the sheet that I got did have some hard spots in it – from what I understand it is a remnant of the manufacturing/rolling process). Polishing was similarly easy up to P600 grit. Going higher proved to be very tedious.
The nominal thickness of the sheet as-received was 3.8 mm, real thickness was closer to 3.9 mm. From what I read it is recommended to grind about 0.2 mm per side – this is to remove the the walls of the container in which the steel was actually manufactured (the steel powder is poured into a container which is then pressed to form the final product). If your Elmax steel comes with mill scale finish on it, you probably want to do the same. If your steel is already ground (I heard some retailers Blanchard-grind it) it may not be needed. I ended with a blade of 3.6 mm thickness and no signs of the container.
The handle is some sort of Indian blackwood, hardware is bronze.
